202. Dogfish Head 75 Minute IPA

Was not sure what to expect from this offering from Dogfish Head as I had not read anything about it before opening the bomber. First thing I noticed was the amount of carbonation which made it very difficult to pour, this happens on occasion and it took me at least 3 minutes to get the glass you see in this picture. Pour a little, drink the foam and repeat. Smell is very subtle with some sweetness and a bit of earthy hops, nothing overpowering but certainly inviting. Taste is different than the other "minute" ipas from Dogfish Head and provided you do not drink this one very cold you will certainly taste the maple flavor coming through. This give the beer a different taste with the hops and sweet maple tastes, different and worth trying but I still prefer the 90 minute IPA over the other varieties. I do like the new embossed bottles with the Dogfish logo right there on the bottle.
Pros: Different due to the maple flavor
Cons:
Alcohol Content: 7.5% ABV
Calories: ???
IBU (Bitterness): 75

Rating: ★★
★½☆
Brewers Website: Dogfish Head
Brewers Description: Blend two Dogfish Head favorites, add maple syrup and carbonate the mixture naturally. What do you get? 75 Minute IPA.

The carbon dioxide trapped during bottle conditioning gives 75 Minute IPA a soft and velvety mouthfeel. Dry-hopped with whole-leaf Cascades, this complex IPA has been known to inspire pilgrimages to our brewpub.

Now were sharing this animated blend of 60 Minute and 90 Minute with the rest of our fans, 750 milliliters at a time.

192. Dogfish Head Noble Rot

I had no idea what to expect with this one as the label says it is ale brewed with grape must. It is classified as a saison but tastes nothing like the Elegans Saison from Sebago or the saisons from Oxbow. Pours a pale yellow with thick white head, looks like an American light beer. Smells of wine, grapes with a slight tinge of alcohol.  Taste is light beer at first followed by a burst of white grape and very sweet. Finish is tart like white grape juice. Overall not a bad "beer" if you want to consider it beer but not something I will buy again.
Pros: Wine like characteristics
Cons: Not a lot of beer qualities
Alcohol Content: 9% ABV
Calories: ???
IBU (Bitterness): 18

Rating: ★★
★☆☆
Brewers Website: Dogfish Head
Brewers Description: Hmmm. We wonder if anyone will buy a beer with the word "rot" in the name?
This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash.
The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind.
"This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione.
Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish.
Noble Rot first went on tap at our brewpub in February of 2011 and went into full 750ml bottle production in January 2012.

156. Dogfish Head 120 Minute IPA

This one has moved to the top of the highest alcohol content beers I have reviewed at somewhere between 15-20%. It also has the highest IBU rating of any beer but does not have the hop bite that I expected. Color is a great orange with a slight head that retained well throughout. Beer is well carbonated with lots of tiny bubbles. Aroma is probably the best part of this beer with lots of sweet citrusy hops and a bit of alcohol. Taste is very well balanced and masks the alcohol content well. I recall the 90 Minute version having a lot of pine taste and this one was much more subdued. Overall this is a drinkable beer even with the high ABV and while I still prefer the 90 Minute version you should certainly give this one a try. I am also going to store one of these away for a few years as I hear it ages well.
Pros: Aroma, well balanced
Cons:
Alcohol Content: 15-20% ABV
Calories: ???
IBU (Bitterness): 120

Rating: ★★★☆
Brewers Website: Dogfish Head

Brewers Description: Too extreme to be called beer? 120 Minute IPA is brewed to a colossal 45-degree plato, boiled for a full two hours while being continuously hopped with high-alpha American hops, then dry-hopped daily in the fermenter for a month and aged for another month on whole-leaf hops!
Clocking in at 15-20% ABV and 120 IBUs, 120 Minute is by far the biggest IPA ever brewed! It's easy to see why we call this beer THE HOLY GRAIL for hopheads!
We brew 120 Minute IPA a few times a year, but it goes fast. If you find some grab a few bottles -- some to enjoy and some to age.

Every Beer Has A Story...
Check out this Quick Sip Clip to see Sam talking about 120 Minute IPA. In the video, Sam also shows off some of our vintage pieces of brewing equipment, including our second-generation continuous-hopping device, Sir Hops Alot. He also touches on why we dialed 120 Minute IPA back in ABV, some aging recommendations, and a little lesson on IBU measurement. Enjoy!

119. Dogfish Head 60 Minute IPA

This is the second of 3 IPAs from Dogfish Head and this one does stand out among the many other IPAs on the market. I still prefer the 90 minute to this one but at 6% alcohol this is the beer you should choose when you want more than one. Lots of smells including some citrus, floral and sweet malt. Taste has all of these characteristics as well and is very well balanced. If you enjoy IPAs or have friends or relatives that do keep a few of these in the fridge as it is a solid choice.
Pros: Balanced smell and taste
Cons: Not as good as the 90 Minute IPA
Alcohol Content: 6.0% ABV
Calories: ???
IBU (Bitterness): 60

Rating:
Brewers Website: Dogfish Head

Brewers Description: Our 60 Minute IPA is continuously hopped -- more than 60 hop additions over a 60-minute boil. (Getting a vibe of where the name came from?) 60 Minute is a session India Pale Ale brewed with a slew of great Northwest hops. A powerful but balanced East Coast I.P.A. with a lot of citrusy hop character, it's the session beer for hardcore enthusiasts!

106. Dogfish Head Olde School

WOW. This one has moved to the top of the list for highest alcohol content at 15%. While you can taste the alcohol and feel the burn it is not as overpowering as you might think. Somehow they made this smooth and fruity even with the high ABV. Color is a nice orange with minimal head, aroma is slightly fruity with a fair amount of alcohol. The beer itself is smooth but you can feel the burn and it certainly warms you from the inside out. This is not a beer you want to take lightly and one is certainly enough for me in a night. Like having 3 beers in one.
Pros: Smooth, high alcohol content
Cons: Fair amount of alcohol burn
Alcohol Content: 15.0% ABV
Calories: ???
IBU (Bitterness): 85

Rating: ★★★☆☆

Brewers Website: Dogfish Head Olde School
Brewers Description: Bold, yet smooth! Fermented with dates and figs, this bone-crusher has a completely unique flavor. The concept for this beer came from an old Cellerman's manual Sam came across (for more on that, check out the video below). At about 15% abv, this beer is a great candidate for ageing. Over time, the beer dries out and the pit fruit flavors come forward and the hops recede. Our recommendation? Grab a few bottles when you find it - enjoy one now, and age the others for a bit. Let us know which you prefer! Olde School Barlewine comes out in the fall annually. It is available in 12-ounce bottles by the 4-pack. Want more info on the cowboy label art? 100. Dogfish Head Faithful Ale

For my 100th review I thought I would choose something special and since I love Pearl Jam and Dogfish Head I thought this would be the perfect choice. Overall this is a quality beer as most Dogfish Head varieties are but I had hoped for more from Faithful Ale. Color is fairly light with almost no lacing, aroma is minimal with some slight wheat/yeast notes in there but not much. Taste is fairly simple and about what you would expect from a beer of this color. Lots of currant and minimal hops. Overall not a bad choice and I know Eddie Vedder prefers wine to beer to so was not expecting anything too complex with this variety from Dogfish Head.
Pros: Pearl Jam label
Cons: Simple
Alcohol Content: 7.0% ABV
Calories: ???
IBU (Bitterness): 20

Rating: ★★★☆☆

Brewers Website: Dogfish Head
Brewers Description: Faithfull Ale is a celebration of Pearl Jam's 20th anniversary as a band and its extraordinary debut album, "Ten." In recognition of these milestones, this Belgian-style golden ale is delicately hopped to 20 IBUs and fruit-forward from 10 incremental additions of black currants over a one-hour boil. Faithfull clocks in at 7% ABV. "To me, 'Ten' is the perfect example of a record-lover's-record. The whole thing rocks," says Dogfish Head President & Founder Sam Calagione. "As an off-centered brewery, we believe in celebrating the breadth of our whole portfolio and we feel an affinity for Pearl Jam a long-player band in a singles-obsessed world."
Faithfull Ale is the third beer in our Music Series, following our Miles Davis-inspired Bitches Brew and our beer tribute to blues man Robert Johnson, Hellhound On My AleFor more on the band and their 20th anniversary celebration, visit www.pearljam.com and www.pj20.comFor more on the story behind Faithfull Ale, here's Sam with our Quick Sip Clip: Faithfull Ale:

89. Dogfish Head 90 Minute IPA

This is probably the higher IBU rating that I have had. Some brewers do not post the IBU rating so I cannot be sure but 90 is very impressive. Overall this beer was better than I expected as I am not a "hop head" and usually do not enjoy beer with high IBU ratings. The color is a great bronze/gold color with a small head that leaves a great lacing on the glass. The appearance alone makes this beer worth drinking. Taste was smoother than I expected for a 9% ABV - 90 IBU beer and there is a lot of malt in there to help offset the hops. This is a very good example of an IPA or more accurately a double IPA. If you like hops give this a try. I am now looking forward to the 120 IPA review.
Pros: Appearance, smooth
Cons: Lots of hops which can be a pro if you like them
Alcohol Content: 9.0% ABV
Calories: ???
IBU (Bitterness): 90

Rating: ★★★☆
Brewers Website: Dogfish Head
Brewers Description: Esquire Magazine calls our 90 Minute IPA "perhaps the best IPA in America." An imperial IPA best savored from a snifter, 90 Minute has a great malt backbone that stands up to the extreme hopping rate. 90 Minute IPA was the first beer we continuously hopped, allowing for a pungent -- but not crushing -- hop flavor. Since introducing the world to the continuous-hopping method with our 90 Minute IPA, we've since released the continuously hopped 60 Minute IPA, 120 Minute IPA and even a 75 Minute IPA (a cask-conditioned blend of 60 and 90 Minute IPAs). In addition to the continuous hopping, 90 Minute IPA is also dry hopped with our 'Me So Hoppy' device during conditioning (check it out in the video below). This beer is an excellent candidate for use with our Randall The Enamel Animal filter!

71. Dogfish Head Midas Touch

This beer is certainly unlike anything else I have tried. A very interesting combination of honey, saffron, papaya and melon. You can certainly smell the saffron after poured. The head in the photo is probably a result of a bad pour on my part but it does have a fair amount of carbonation and great coloring. Overall I gave this an above average rating as I like original beer and of the 71 different beer reviews done to date this one is unique.
Pros: Unique
Cons:  Alcohol taste is strong at times
Alcohol Content: 9.0% ABV
Calories: ???
IBU (Bitterness): 12

Rating: ★★★½☆
Brewers Website: Dogfish Head
Brewers Description: This recipe is the actual oldest-known fermented beverage in the world! It is an ancient Turkish recipe using the original ingredients from the 2700 year old drinking vessels discovered in the tomb of King Midas. Somewhere between wine & mead; this smooth, sweet, yet dry ale will please the Chardonnay of beer drinker alike.

42. Dogfish Head Indian Brown Ale

According to Dogfish's website this is a blend of a Scotch Ale, IPA and Brown Ale and it certainly makes for an interesting combination. Seems closer to a brown ale but does have a fair amount of hoppiness to it.  Pours to a nice deep brown color with a tan head. The head disappeared very quickly and there was not a lot of carbonation. Very smooth to drink with complex flavors.
Pros: Very flavorful, easy to drink
Cons:
Alcohol Content: 7.2% ABV
Calories: ???
IBU (Bitterness): 50
Rating: ★★★½☆

Brewers Website: Dogfish Head
Brewers Description: Forget about the car companies, this is the original hybrid, a cross between a Scotch Ale, an India Pale Ale, and an American Brown. Our Indian Brown Ale is well-hopped and malty at the same time (magical). The beer has characteristics of each style that inspired it; the color of an American Brown, the caramel notes of a Scotch Ale, and the hopping regiment of an India Pale Ale. We dry-hop the Indian Brown Ale in a similar fashion as our 60 Minute IPA and 90 Minute IPAs. This beer is brewed with Aromatic barley and organic brown sugar.
Food Pairing Recommendations: Balsamic vinaigrette salads, smoked meats, duck confit, braised ribs, venison, prosciutto, stews
Tasting Notes: molasses, coffee, ginger, raisinettes, chocolate
